Ingredients

Adjust Servings:
2 x 100g Wild Salmon fillets
1 tsp Olive Oil
1 x 400g tin butter beans - drained and rinsed
2 Garlic Cloves - chopped
100ml Almond Milk
200g French Beans - topped and tailed
50g Rocket
2 Sundried Tomatoes - chopped finely

    Put a pan on to heat and a pan of water onto boil.

    In a food processor blitz the butter beans, milk and garlic until smooth. Season. Put in a pan on a low heat to heat up.

    Brush the salmon with the oil.
    Season, put skin side in the hot pan.
    Cook until the skin is brown (about 3minutes), turn the salmon over.
    Turn over to brown all 4 sides.

    Mix the rocket with the rocket.

    Split the mash, salad, French beans and salmon between 2 plates.
