The Boss’s Chicken Rice Noodles

Ingredients

Adjust Servings:
100g Rice Noodles
2 Small Chicken Breast
1tsp Olive oil
200g Baby Carrots - topped, tailed, into 1/4s
1" Fresh Ginger Root - peeled and finely chopped
250g Mushrooms - sliced
150g drained Bamboo shoots
5 Spring Onions - chopped
2tblsp Coconut Aminos
1 handful Spinach - chopped I chop it like a herb - and someone who doesn't like cooked spinach doesn't even notice it's in there! Lucky he probably won't look on here ;-)

According to the boss these are good ! Strange as he doesn't like cooked spinach apparently ;-)

    Heat up a wok or pan.

    Put rice noodles in boiling water. Leave soak for 10 minutes.

    Cook the chicken with the olive oil in the pan for 5 minutes until cooked through.
    Remove and set aside.

    Put the carrots and ginger in the pan. Cook for 5 minutes until the carrots are softening.

    Add the mushrooms. Cook until soft.

    Add the bamboo shoots. Cook for 1 minute.

    Add the spring onions and aminos, return the chicken to the pan. Season.

    Drain the noodles, add to the pan with the spinach. Mix it all together.
