Ingredients

Adjust Servings:
6 Large Mushrooms - cut in half
3 Large Tomatoes - cut in half
1tblps Olive Oil
150g Kale - thick veins removed and torn into bite size pieces
1tblps Water
1 Avocado - peeled and cut into chunks
20g Pine Nuts
20g Goji Berries
2tblps Balsamic Vinegar

Another one pan dish that packs a breakfast punch !

    Steps

    Heat a pan and add the olive oil.

    Add to the pan the tomatoes and mushrooms and cook on both sides for 5 minutes until browned and well cooked. Season. Remove from the pan and set aside (cover with tin foil or a plate to keep warm).

    Add the kale to the pan with the water and cook until it goes limp (a few minutes).

    Add the avocado, pine nuts, goji berries and balsamic and cook for a few minutes until all combined and coated.

    Add the tomatoes and mushroom back to the pan and season .

    Split between 2 plates and serve warm.
