Ingredients

Adjust Servings:
2 Pears - peeled, cored & quartered
1tblsp Agave Syrup
1tblsp Balsamic Vinegar
1tsp Ginger - peeled and chopped
1tsp Ground Cinammon
1/2 tsp Cumin
50g Puy Lentils - rinsed
20g Walnuts - chopped roughly
5 Spring onions - choped
1 Red Chilli - chopped finely deseed if you don't like it too hot as a lot of heat is held int he seeds.
1 handful Parsely - chopped finely
1 Lime - juice & zest
30 Cherry Tomatoes
2tsp Mixed dried herbs
1 Garlic clove - chopped
1tsp Olive Oil
100g Rocket

Caramelised Pear & lentil Salad

Sweet and filling with a bit of a kick.

    Put pears, agave, balsamic, ginger, cinnamon, cumin & pears in a pan. Bring to a simmer for 30minutes – the pear will caramelise, the liquid turn to a syrup. Cool

    Put the lentils in a pan, cover with water. Bring to the boil, simmer for 25 minutes (longer if you like your lentils slightly softer). Drain. Cool.

    Put the tomatoes, herbs, garlic & oil on oven tray. Bake for about 5 minutes until the tomatoes soften. Cool.

    Mix the lentils with the walnuts, spring onions, chilli, lime juice, coriander & season.

    Put half the rocket on each plate and split the lentil mix followed by the pears and tomatoes between the 2 plates.
