Ingredients

Adjust Servings:
200g Wild Mushrooms - prepped into bite size pieces
1 Red Onion - chopped
1 Garlic clove - chopped finely
250g Firm Tofu - crumbled ( I like smoked )
3tblsp Coconut Aminos
150g Kale - big veins removed - torn into bite size pieces
1 tblsp Water
20g Pumpkin Seeds

    Heat up a pan.

    Cook the onion and garlic with the olive oil.

    Add the mushrooms and cook for 2 minutes.

    Add tofu and aminos. Cook for a few minutes until tofu is hot and mushrooms are soft.

    Add kale and water. Season. Cook until kale is wilted.

    Serve sprinkled with pumpkin seeds
