Ingredients

Adjust Servings:
600g Carrots - peeled and chopped into bite size pieces
1 tblsp Saffron
60ml Apple Juice
25g Coconut sugar
1/4 tsp Lemon Juice
1 tblsp Vegetable Stock
300g Frozen Petit Pois
50g Giant Cous Cous

    Brown the carrots in a pan, add the saffron, apple juice, lemon juice and coconut sugar. Reduce to a syrup. Add the stock. Bring to the boil. Put in a lidded casserole dish. Put in the oven for 40 minutes.

    Put the cous cous in a pan. Cover with boiling water. Season. Simmer for 8 minutes until tender. Drain.

    Add the peas and the cous cous to the lidded dish. Stir. Put in the oven for 10minutes until the peas are cooked.

    Serve.
