Ingredients

Adjust Servings:
4 Large white onions - sliced
1 litre Vegetable Stock
4 tblps Coconut Aminos
2 tbslp Balsamic Vinegar
2 tblps Thyme Leaves - chopped
3 Garlic Cloves - chopped or minced
Cheese:
150ml Water
75g Raw cashews
2 tblps Apple cider vinegar
6 tblps Nutritonal Yeast
1 tblps Arrowroot Powder
6 slices Brown bread - toasted and cut to fit your oven proof bowls

      Sauté the onions, stirring until they soften – about 10 minutes. Put a lid on the pot but not covering completely. Lower the heat. Cook for another 1.5-2 hours stirring occasionally until the onions are a caramel colour and smell sweet. (You can also put in a casserole dish with the lid partially open in the oven on 180C instead if you prefer).

      Add the aminos, stock, vinegar, thyme and garlic to the onions. Bring to the boil. Simmer for 45 minutes. Season.

      In a food processor blitz until the smooth the water, cashews, apple cider vinegar, nutritional yeast and arrowroot. Season. Cook in a pan stirring nonstop until it turns thick and stretchy. Spread some on each piece of toast. Set aside.

      Heat your grill to high.

      Split the onion soup between 6 bowls. Top each with a piece of toast. Grill for 5 minutes until the cheese is golden brown. Serve – don’t burn yourself on the bowls.
