Turmeric Crusted Cod, Sweet Potatoe Chips and Parma Ham

Ingredients

Adjust Servings:
2 x 100g Cod Fillets
2 tblsp Ground Flax seed
1 tsp Ground Tumeric
2 tblsp Coconut Oil
2 Sweet potatoes - cut into wedges
4 tblsp Polenta
2 tblsp Onion Powder
250g Sugar snaps
50g Parma Ham - sliced

    Boil the potatoes I water for 10 minutes until they have softened slightly. Drain.

    Mix the polenta and onion powder together. Season. Coat all the sweet potatoes and spread on a lined tray not touching. Bake for 35 minutes.

    Mix the flax seed with the turmeric and oil. Season. Put the cod on an oven tray and top with the flax seed mix. Bake for 15 minutes.

    Spread the sugar snap on an oven tray. Season. Top with the Parma ham. Bake for 10 minutes. Chop the Parma ham and mix with the sugar snap.
