Ingredients

Adjust Servings:
750g Shitake Mushrooms - Thickly sliced
60g Cornflour
50g Fresh ginger root - peeled and chopped finely
7 Garlic cloves - peeled and chopped finely
20g Cornflour - mixed with 2 tblps water
75g Coconut Sugar you can use normal sugar or an other sweetner
100ml Soy Sauce
50ml Rice Wine Vinegar
150ml Water
3tblsp - add to taste Agave Syrup - optional
1 bunch Spring onions - chopped
15g Sesame Seeds
250g Rice - cooked - as per packet instruction / How you prefer Soak for half an hour in water before cooking for a better result

    Coat the mushrooms in the 60g cornflour. Season. Cook for 5 minutes in a hot pan until brown and crisp. You may need to do this in batches so all the mushrooms are touching the pan dependant on the size of your pan.

    Cook ginger and garlic in a pan for a few minutes. Add the sugar. Cook for a few minutes until it bubbles slowly and reaches caramel ( 3 -4 minutes on medium heat ). Add the soy, cornflour mix, rice wine vinegar and water. Bring to a simmer. Cook for a few minutes.

    Serve the rice, mushrooms and sauce sprinkled with the spring onions and sesame seeds.
