Ingredients

Adjust Servings:
100g Rocket
1 Apple - cut into 8 core removed
1 Pear - cut into 8 core removed
1 bunch Spring onions - topped, tailed and cut into 1" pieces
1 bunch Asparagus - tailed
1 tblsp Olive oil
500g Butternut squash - cut into 1cm thick bite size pieces
2 tsp Dried Chillies
1 tsp Olive oil
25g Blue cheese - crumbled
200ml Vegetable stock or 1 vegetable stock & 200ml water ( per 200ml )

    Put the apple, pear, spring onions and asparagus on an oven tray, drizzle with oil. Season. Bake for 25 minutes until cooked. Add the pecans to the tray and cook for 1 minute.

    Heat up a pan hot.
    Brown the butternut squash with the oil. Rub with chillies and put in the oven with the vegetables. Wipe the pan clean and put back on the heat.

    Put the stock in the pan. Bring to the boil and simmer for a few minutes. Whisk in the cheese until all melted and well combined. Season.
