Steak and Chips with Onion Rings

Ingredients

Adjust Servings:
2 x 100g Beef fillet
1 Red onion - peeled and cut into rings
3 tblsp Nutritional Yeast
1 tblsp Coconut oil - melted
1 tsp Paprika
1 tsp Mixed dried herbs
1 Sweet Potatoe - cut into thin wedges
1 tblsp Paprika
200g Mushrooms
200g Cherry Toamatoes
2 tblps Balsamic Vinegar
50g Rocket - optional

    Coat the sweet potatoes in paprika and season. Spread out on a tray so they are not touching. Bake for 40 minutes – turn at least once and keep an eye on them so they do not burn.

    Mix the nutritional yeast, paprika and mixed herbs together. Season.

    Put the onion rings in a bowl and drizzle with the coconut oil. Mix around so they are all coated. Pass each onion ring through the nutritional yeast individually to coat. Spread out on a tray so they are not touching – bake for 10-15 minutes until crisp but not burnt (time depends on thickness of your rings.

    Put the mushrooms and tomatoes on a tray and drizzle with the balsamic. Season. Bake for 15 minutes.

    Heat up a pan.

    Season the beef. Place in the hot pan and cook one side for 3 minutes. Turnover and cook for a further 3 minutes. If you prefer you steak cooked more just continue to cook until it is as cooked through as you like.

    Split all the ingredients between 2 plates and serve with half the rocket each.
