Ingredients

Adjust Servings:
100g Smoked Salmon
4 Eggs
50ml Almond Milk
100g Rocket
45g Oats
10g Chia Seeds
3g Baking powder
45g Unsweetened apple sauce
15g almond milk

    Put the oats, chia, baking powder in a food processor. Blitz until you have a flour. Season.

    Add the apple sauce and milk. Combine. It should be wet and sticky.

    Form into 2 balls and flatten into discs. You might find it easier if you wet your hands.

    Bake for 40 minutes until cooked. They will be golden and sound hollow when tapped on the bottom.

    Whisk the eggs and milk together. Season. Bring to a medium heat. Move using a wooden spoon, it will take a few minutes to cook. Continue until they are as cooked as you like them (some people like them loose, others quite firm. They will continue to cook once out of the pan).

    To serve slice the muffin in half, put on top of the rocket. Top with the eggs and salmon.
