Seabass with Tropical Fruit & Black Sesame Asparagus

Ingredients

2 Seasbass Fillets ( 100g each )
1 tsp Olive Oil
250g Fine Asparagus
1 tblsp Black Seasme Seeds
0.5 fresh Pineapple - peeled & sliced into 1cm thick pieces
50g Strawberries - hulled
100g Blueberries
100ml Vegetable Stock
1 tblsp Coconut Vinegar
1 tsp Agave Syrup

Seabass with Tropical Fruit & Black Sesame Asparagus

    Heat up 2 pans.

    In one put the pineapple and strawberries – cook one side for 10 minutes until golden – turn over and repeat. Season.

    Put the blueberries in a cool pan with the stock, vinegar and syrup. Season and bring to a simmer.

    Brush the bass and asparagus with oil. Season. Put the bass skin side down in the hot pan. Follow with the asparagus. Turn the bass when the skin is brown and the flesh is almost cooked. Cook for a few more minutes flesh side down until cooked through. Remove the fish and sprinkle the asparagus with the sesame seeds.
