Ingredients

Adjust Servings:
2 Salmon Fillets - 100g
1 tsp Olive oil
100g Buckwheat pasta
200g French Beans - toppped and tailed - cut in half
200g Mushrooms - sliced
1 tsp Olive Oil
1 tblsp Peanut Butter - smooth
1 Lime - juice
1 handful Fresh Coriander leaves - chopped
1 tblsp Sesame seeds
1 tblsp Coconut Aminos
100ml Water - from cooking the pasta

    Heat 2 pans and one pan of water to boil.

    Put French beans in the boiling water for 4 minutes. Take out the water. Set to one side. Keep the water boiling.

    Brush salmon with oil. Season – put skin side down in a pan for 5 minutes. Turnover, cook for another 5-7 minutes to your liking.

    Boil the pasta for 8-10 minutes – taste near the end of cooking until al dente (not soggy!). Drain. Reserve the water for the sauce.

    In the other pan cook the mushrooms with olive oil until soft. Add peanut butter, lime juice, aminos, and water. Reduce for a few minutes until it resembles a sauce. Add French beans and pasta to the sauce. Season.

    Split the pasta between 2 plates. Serve with the salmon.
