Salmon, Melon and Pickled Ginger Salad

Ingredients

Adjust Servings:
2 x 100g Salmon Fillets
0.5 Charentais Melon - peeled , deseeded and cut into 1cm cubes
1 Carrot - peeled and peeled into thin strips
150g Spinach
1" Fresh Ginger root - peeled and sliced really thin - julienne
100ml Apple cider vinegar
1 tblsp Agave Syrup
1 tblsp Sesame seeds

Salmon, Melon and Pickled Ginger Salad

    Put the salmon on a tray. Season. Bake for 10 minutes.

    Boil the vinegar, agave and sesame seeds. Add the ginger. Re-boil. Cool.

    Mix together the carrot, melon and spinach. Season. Dress with the pickled ginger. Top with the salmon.
