Ingredients

Adjust Servings:
2 Salmon Fillets - 100g
1 tsp Olive Oil
250g Mushrooms - in quarters
200g Mange Tout - cut in half
250g Baby Carrots - in quarters If you dont have baby use normal ones - peel and cut into chips
200g Spring Onions - topped taile and halved
2tblsp Water
1 " Fresh Ginger root - peeled and chopped finely
2 tblsp Coconut Aminos

    Heat up 2 pans.

    In one pan put the mushrooms and carrots.

    Brush the salmon with the oil.
    Season, put skin side in the hot pan.
    Cook until the skin is brown (about 3minutes), turn the salmon over.
    Turn over to brown all 4 sides.

    In the other pan whilst the salmon is cooking, season and add the water. Add the ginger and spring onions and cook for a few minutes.

    Add to the veg the mange tout, aminos and seasoning. Cook for a few minutes.
