Salad of Salmon & Basil Roasted Tomatoes

Ingredients

Adjust Servings:
2 x 100g Salmon Fillet
4 Tomatoes - with a cross across the top
1 Garlic - peeled and sliced
10g Basil - leaves only
15g Pine nuts - toasted
200g Sugar Snap
50g Spinach
2 Mushroom - sliced finely

    Put the tomatoes on an oven tray. Season. Push into the cross in each tomatoes some of the garlic, and half of the basil (keep the rest for the salad). Bake for 30 minutes.

    Put the salmon on an oven tray. Season. Bake for 10 minutes.

    Put the sugar snap on the same tray as the tomatoes for the last 5 minutes of cooking. Season.

    Mix together the salmon, spinach, basil, pine nuts and mushrooms. ( I also used 1 tblsp basil and pine nut dressing to finish it)
