Rosemary Chicken & Pineapple

Ingredients

Adjust Servings:
2 Chicken breast - skinned and butterflied
1 handful Fresh Rosemary - tips not stalks
1 tsp Olive Oil
0.5 Fresh Pineapple - peeled - cut into fingers ( 12 per pineapple)
2 Courgettes - julienne or grated
100g Spring onions - halved length ways
1 tsp Olive Oil
1tblsp Coconut Aminos
100g Rocket

    Rub chicken and pineapple with rosemary

    Heat 2 pans on the stove.

    In one pan put the pineapple, cook on high heat – add the chicken and leave cook for 5 minutes until brown.
    Turn both the chicken and pineapple over. Cook for another 5 minutes – until he chicken is white all the way through.
    ( not pink like my dad would have it if I let him – it’s dangerous and can make you very sick!)

    Once you have turned the chicken over in the pa. In the other pan sauté the courgettes and spring onions until soft, add aminos. Season.

    To serve put half the rocket on each plate and share the other ingredients out.
