Roasted Duck, Grapes & Maple Pecan Sauce

Ingredients

Adjust Servings:
2 Duck breasts - 200g
300g Seedless mixed grapes
1 Onion - sliced
Chopped rough Pecans
1tblsp Coconut Aminos
2tsp Maple Syrup
500ml Vegetable Stock
2 Spinach - Handful - chopped roughly

    Put the grapes in the oven on a tray spread evenly.

    Heat up a pan really hot.
    Season the duck.
    Put in the pan skin side down.
    Cook until golden brown.
    Turnover and seal all the flesh side.
    Put in the oven for 10 minutes (pink – cook for longer if you do not like it bloody! )

    Wipe the pan clean. Cook the onions until golden brown.

    Add the pecans. Cook for 1 minute.

    Add the aminos and syrup cook for 30 seconds to caramelise.

    Add the stock. Boil and reduce. Season.

    Remove the skin from the duck and slice.

    Add to the pan the duck, grapes and spinach. Mix together.

    I served this with Sweet Potato Rosti
