Ingredients

Adjust Servings:
200g Mushrooms - sliced or quartered
1 clove Garlic - chopped or minced
4 Large tomatoes - halved
200g Asparagus - skinny ones work better
1tblps Olive Oil
100g Rocket

    Heat a large pan, add the oil and the mushrooms & sauté until soft.

    Add the tomatoes – flesh side down.

    Add the asparagus. Season all the ingredients.

    Every few minutes move the mushrooms & asparagus.
    Cook tomatoes until slightly browned on one side & turn over.
    Continue until the tomatoes are cooked through & the asparagus is soft.
    (About 10 -15 minutes dependant on stove and pan).

    Serve half the ingredients on each plate with half the rocket.
