Pistachio, Orange and Tofu Salad

Ingredients

250g Tofu - cut into bite size pieces
2 Sweet potatoes - cut into chips
2 tsp Ground Cinammon
1 tsp Paprika
1 tblsp Olive OIl
2 Red onions - sliced into rings
3 tblsp Nutritional yeast
1 tsp Mixed Herbs
2 Oranges - peeled and into segment ( juice kept )
25g Unsalted Pistachios
200g Spinach

    Mix together cinnamon, paprika. Coat the potatoes in the oil and sprinkle with the spices. Season and coat evenly. Spread on a tray. Bake for 35 minutes turning once until crispy.

    Mix the yeast and herbs together, season. Shake over the onions, coat evenly. Spread on a tray. Bake for 30 minutes turning once until crispy.

    Ten minutes before the baked goods are ready put the tofu on an oven proof dish with the pistachios and orange juice, season. Bake for 10 minutes.

    Mix the spinach, oranges, tofu, pistachios, sweet potatoes and onions rings to serve.
