Ingredients

Adjust Servings:
2 Chicken Breast - 100g
2 tblsp Wholegrain Mustard
1tsp Olive Oil
2 Lemons - juice and zest
1 tblsp Agave syrup
1 tblsp Apple Cider Vinegar
200ml Vegetable Stock
200g French Beans - topped, tailed and halved
200g Mange Tout - halved
10 Cherry tomatoes
200g Courgettes - cut into bite size pieces

    Cut a hole in the centre of the chicken breast and stuff each with 1 tbsp. mustard.

    Heat up a pan, season the chicken and brush with oil. Put in the pan with the courgettes. Cook on one side for 12 minutes until brown – turn over and repeat until cooked through and the courgettes are browned.

    Put the, lemon juice, zest, agave, vinegar and stock in a pan. Season. Bring to the boil, reduce a little.

    Bring a pan of water to the boil. Cook the French beans for 5 minutes. Add the mange tout and tomatoes. Drain.

    Put the vegetables and broth in the pan with the chicken until all coated.
