Ingredients

Adjust Servings:
250g Firm Tofu - crumbled
200g Cherry Tomatoes - halved
100g Spinach
3 tblsp Coconut Aminos
45g Oats
10g Chia Seeds
3g Baking Powder
45g Unsweetened Apple Sauce
15g Almond Milk

    Put the oats, chia, baking powder in a food processor. Blitz until you have a flour. Season.

    Add the apple sauce and milk. Combine. It should be wet and sticky.

    Form into 2 balls and flatten into discs. You might find it easier if you wet your hands.

    Bake for 40 minutes until cooked. They will be golden and sound hollow when tapped on the bottom.

    Heat up a pan.

    Cook the tofu for a few minutes until tofu is hot and has a little colour.

    Add tomatoes cook for a few minutes.

    Add spinach and aminos. Season. Cook until spinach is wilted.

    Slice the muffin in half and serve the scramble on top.
