Jersey Mackerel, Ginger Pickle and Apple Salad

Ingredients

Adjust Servings:
2 whole fresh Mackerel - filleted
1 Apple - corred and cut into small cubes
1 Courgette - cut into thin strips - julienne
100g Cherry tomatoes - cut in half
20g Walnuts - chopped
1 " Fresh Ginger root - peeled and cut into thin strips - julienne
100g Apple Cider Vinegar
1 tblsp Agave Syrup

    Put the ginger, vinegar and agave in a pan. Boil. Set aside to cool.

    Heat a pan till it’s very hot. Season the mackerel. Put in the pan skin side down. Cook for 5 minutes until brown and crispy. Turnover and cook for a few minutes until the flesh is cooked through.

    Mix all the salad ingredients together and use the ginger flesh (save the vinegar pickle and you can use it again ) to dress the salad. Season. Serve with the mackerel.
