Adjust Servings:
1 Aubergine - cut into 1cm slices
1 Tomatoe - sliced
1 red onion - peeled and sliced into rings
50g Halloumi - sliced
1 tblsp Dried mixed herbs

    On a lined oven tray layer the aubergine, tomato, onion and halloumi into stacks. Each layer season and sprinkle with dried herbs. Bake for 40 minutes.
