Haddock with Lemon, Ginger and Honey Noodles

Ingredients

Adjust Servings:
2 Haddock Fillets - 100g
1tsp Olive Oil
250g Mushrooms - sliced
1 inch Fresh ginger root - peeled and chopped finely
1 Pack Choi - sliced - white & green bits seperate
1 Courgette - sliced thinly / Julienne
200g Beansprouts
1 tsp Olive Oil
1 Lemon - juice
1 tsp Honey
50g Rice noodles - soaked in boiling water for 10 minutes and drained

    Heat up 2 pans - really hot.

    In one pan put the olive oil, ginger and mushrooms.
    Cook until soft.

    Brush the fish with olive oil. Season.
    Put in the other pan flat side down for 4 minutes.
    Turn over cook for 4 minutes until just cooked through.

    To the mushroom pan add courgette and white part of pak choi. Cook for 2 minutes until it softens a little.
    Add beansprouts, green pak choi, noodles, lemon juice and honey. Combine well.
    Cook for a few minutes until it’s all hot.
