Adjust Servings:
1 Medium Sweet Potatoe - peeled cut inot 2.5cm discs ( rounded into circles if you wish )
1 tblsp Coconut Oil
1.5 pints Vegetable Stock

    Cook the sweet potatoes in a pan with the coconut oil until browned on both sides.

    Add the stock.

    Bring to the boil.

    Put in an oven proof dish in a single layer with the stock for 35 minutes until cooked through.
