Ingredients

Adjust Servings:
2 Duck Breasts
3 Plums - deseeded and cut into 1/4s
200g Spring Onions - topped – tailed and cut in half
250g French beans - topped – tailed and cut in half
1" Ginger root – peeled and chopped finely
1 Sweet Potatoe -thinly cut / Julienne
2 tsp Ground Nutmeg

    Put the plums, spring onions, French beans and ginger in an oven proof dish. Season. Bake for 30 minutes.

    Put the sweet potato on an oven tray and spread out thinly, rub the nutmeg and season to taste. Bake for 30 minutes – keep an eye on them as they may need moving around. If they get crisp before take them out and set aside.

    Heat up a pan really hot.
    Season the duck.
    Put in the pan skin side down.
    Cook until golden brown.
    Turnover and seal all the flesh side.
    Put in the oven for 10 minutes (pink – cook for longer if you do not like it bloody! )

    I skinned and sliced the duck, mixed it with the plum mix. Finished the dish by sprinkling it with the sweet potato, to ensure dad ate all his veg and not just the meat!! You can serve it differently!
