Ingredients

Adjust Servings:
1 Duck Breast
Sauce:
1 tblsp Tomatoe Puree
1 tblsp Coconut Aminos
4 tblsp Water
1 tblsp Maple Syrup
0.5 tsp Ground Ginger
0.5 tsp Ground Paprika
100g Brown Rice Pasta
300g Mushrooms - cut into bite size pieces
200g Pak Choi - roots removed and chopped rough
50g Spring Onions - chopped

    Heat 1 pan and boil a pan of water.

    Season the duck.
    Put in the pan skin side down.
    Cook until golden brown.
    Turnover and seal all the flesh side. Rinse the pan and put back on the heat.
    Put in the oven for 10 minutes (pink – cook for longer if you do not like it bloody! ).
    Rinse the pan and put back on the heat.

    Cook the rice pasta the boiling water for 6 minutes. Drain.

    Mix together the puree, aminos, water, syrup, ginger and paprika for the sauce. Season.

    In the other pan cook the mushrooms until soft. Add the spring onions, pak choi and sauce. Bring to a simmer.

    Slice the duck.

    Add the duck and the pasta to the vegetables and sauce. Season
