2 Duck Breasts
100g Rocket
1 Apple - cut into 8 core removed
1 Pears - cut into 8 core removed
1 bunch Spring Onions - topped tailed and cut into 1” pieces
1 bunch Asparagus – tailed
20g Pecans
25g Blue Cheese - crumbled
200ml 200ml Vegetable stock ( or 1 stock cube and 200ml water )

    Put the apple, pear, spring onions and asparagus on an oven tray, drizzle with oil. Season. Bake for 25 minutes until cooked. Add the pecans to the tray and cook for 1 minute.

    Heat up a pan really hot.
    Season the duck.
    Put in the pan skin side down.
    Cook until golden brown.
    Turnover and seal all the flesh side.
    Put in the oven for 10 minutes (pink – cook for longer if you do not like it bloody! ).
    Wipe the pan clean and put back on the heat.

    Put the stock in the pan. Bring to the boil and simmer for a few minutes. Whisk in the cheese until all melted and well combined. Season.

    Skin and slice the duck and serve with ½ the other ingredients each.
