Ingredients

Adjust Servings:
700g Belly Pork
2 Star Anise - crushed
10 Cloves - crushed
1 tsp Yellow Mustard Seeds - crushed
2 Orange - juice and zest
250ml Red Wine
500ml Stock
200g Carrots - peeled and in bite size pieces
2 Apples - cored and into 8ths
120g Cous Cous
200ml Stock - boiling
15g Pine Nuts - toasted
1 tblsp Fresh thyme - leaves not twigs - chopped

    Season the pork. Seal in a pan until all golden brown. Add the anise, cloves, mustard seeds and zest. Cook for a few minutes. Add the red wine and reduce by half. Add the orange juice, carrots and stock. Bring to a simmer. Transfer a casserole. Bake for 3 hours. Wipe out your pan.

    Brown the apples in the pan and set aside. Add to the pork 20 minutes before the 3 hours is up.

    Pour the stock over the cous cous in a bowl. Fluff with a fork. Season. Add the pine nuts and thyme. Cover with Clingfilm.

    Serve the cous cous with the pork vegetables and sauce
