Ingredients

Adjust Servings:
50g Cashews - soaked in water overnight and drained Make sure you soak the cashews overnight as it will make the sauce creamier, a few hours will work but it wont be as delicious.
1 White Onion - chopped
3 Garlic cloves - chopped
1 tsp Olive Oil
2 tsp Ground Nutmeg
150ml Water
2 tblsp Nutritional Yeast plus extra to taste
1 tblsp Coconut Aminos
250g Mushrooms - quartered
200g Asparagus - tailed
6 Shallots - peeled
1 tblsp Olive Oil
2 Chicken Breasts

    Put the chicken, asparagus, mushrooms and shallots on an oven tray.
    Season.
    Drizzle with olive oil.
    Bake for 25 minutes.
    Check occasionally to make sure the veg is not going too brown.

    In a pan brown the onion and garlic with the olive oil. Add the nutmeg and cook for a few minutes. Add the water and bring to the boil, simmer for a few minutes.

    Put the cashews in a food processor with the onion / garlic mix, nutritional yeast and aminos. Blend until smooth. Season. Check if it needs more nutritional yeast according in to your taste.

    Slice the chicken, add to the sauce with some mushrooms, onions and asparagus. Keep some out to garnish if you like or mix it all together.
