Ingredients

Adjust Servings:
500g Butternut Squash - cut into 1 cm cubes
1 Onion - chopped
2 Garlic cloves
1 tsp Dijon mustard
1 tsp Ground Nutmeg
500ml Vegetable Stock
100g Cashews
20g Nutritional Yeast
20g Pine Nuts - toasted
200g Pasta preferably brown
200g Mange Tout - cut into bite size pieces
350g Mushrooms - quartered

    Boil the squash, onions, garlic, mustard, and nutmeg in the vegetable stock for 25minutes until soft. Blitz in a food processor with the cashews until smooth. Season. Add the nutritional yeast.

    Boil your pasta as per the pack instructions. Add the mangetout 30 seconds before the pasta is cooked. Drain.

    Sauté the mushrooms for 5 minutes. Add the pasta, sauce, pine nuts and mange tout. Season.
