Ingredients

Adjust Servings:
2 Chicken Breast - 100g
2 tblsp Wholegrain Mustard
1 tsp Olive Oil
1 Lemon - jucie and zest
20 Cherry tomatoes
1 tsp Dried chillies
1 tblsp Agave Syrup
200ml Vegetable Stock
200g French Beans - topped, tailed and halved
200g Mange Tout - in half
200g Courgettes - in bite size pieces

    Cut a hole in the centre of the chicken breast and stuff each with 1 tbsp. mustard.

    Heat up a pan, season the chicken and brush with oil. Put in the pan with the courgettes. Cook on one side for 12 minutes until brown – turn over and repeat until cooked through and the courgettes are browned.

    Put the tomatoes, lemon juice, zest, chillies, agave and stock in a pan. Season. Bring to the boil, reduce a little. Squash the tomatoes with the back of a spoon and reduce a little more.

    Bring a pan of water to the boil. Cook the French beans for 5 minutes. Add the mange tout. Drain.

    Put the vegetables and chilli sauce in the pan with the chicken until all coated.
