Chicken, Mango and French Beans

Ingredients

Adjust Servings:
2 Chicken breasts
200g French beans - topped and tailed
1 Mango - peeled and in 1cm cubes
10 Spring onions - sliced
1 Pak Choi - sliced
100g Beansprouts
100g Spinach

    Season the chicken. Bake for 25 minutes.

    Heat a pan up. Boil a pan of water 15 minutes into the chicken cooking.

    Cook French beans in the water for 4 minutes until cooked but still crunchy. Drain.

    Put the French beans in the other hot pan, add the spring onions, pak choi, beansprouts and mango. Cook until veg is softened a little. Season.

    Split the spinach and mango mix between 2 plates, top with the chicken.
