Ingredients

Adjust Servings:
1 Cauliflower - green leaves removed and cut inot walnut size florets
250g Long Stem Broccoli
2 tblsp Coconut Aminos
100g Sweet Potatoe Flesh - Cooked I used some from ones I have in the fridge already roasted
50g Buckwheat flour
0.5 tsp Baking Powder
1tsp Coconut oil
Extra for rolling Buckwheat flour

    Drizzle the aminos over the cauliflower. Season. Bake for 30 minutes.

    Put the potato in a food processor until it is smooth. Add the flour and seasoning. Mix until it forms a dough. If it is wet add a little more flour.

    Roll into a ball. Cut into 8 pieces. Roll each of those into a ball.

    On a floured surface flatten each one. Roll into a circle about 10cm across. Dust off excess flour.

    Heat a pan to medium heat wipe with coconut oil. Cook each taco on one side until it is browned. Turnover and repeat.

    10 minutes before the cauliflower is ready put the broccoli in the oven too.

    To serve fill the tacos with the roasted cauli and broccoli. I also put some spicy tomato drizzle on these.
