Ingredients

Adjust Servings:
300g Carrots - peeled and chopped
1 Onion - chopped
1 Leek - chopped
1 Garlic clove - chopped
1" Fresh Ginger root - peeled and chopped
1tblsp Olive oil
500ml Vegetable Stock or Water

    Cook the carrots, leek, garlic, onion, ginger and oil in a pan on a medium heat for 10 minutes. Stir occasionally.

    Add 2/3 of the stock. Bring to the boil.

    Simmer for 10 minutes until carrots are soft.

    Put in a food processor. Blitz until smooth. Season.

    Add more stock to your thickness preference.
