Butternut and Pear Soup

Ingredients

Adjust Servings:
500g Butternut Squash - peeled and chopped
350g ( 2) Pears -peeled, cored and chopped
1 tsp Cumin seeds
1 Onion - peeled and chopped
1 litre Vegetable Stock you could use water if you prefer
1 handful Fresh Coriander Leaves - chopped

    Boil the squash, pears, cumin, onion and stock until it is all soft.

    (how long depends on how small you cut it !).

    Blitz in a food processor until smooth. Season.

    Stir through coriander if using.

    Notes:
    I decorated with dried tomato slices and coriander leaves.
