Beef, Mushroom and Ginger

Ingredients

Adjust Servings:
100g Beef fillet - 2 pieces 50g each
250g Mushrooms - cut in half
1tblsp Olive oil
1tblsp Balsamic Vinegar
1" Fresh Ginger Root - peeled
125g Sring onions - topped, tailed and cut in half
1 Pak Choi - chopped
2 tblsp Coconut Aminos

    Heat up 2 pans.

    In one pan put the mushrooms flat side down.
    Cook for 5 minutes until brown.
    Season.
    Turnover.
    Cook for another 5 minutes until soft.
    Drizzle with balsamic.
    Remove from pan, set aside.
    Wipe pan.

    Put the ginger and spring onions in a pan.
    Cook until the onions are soft.

    Brush the steak with oil.
    Season.
    Put in the other pan.
    Cook for 3 minutes on one side until brown.
    Turn over.
    Repeat.
    If you prefer a non-bloody steak – cook for longer.

    Whilst the steak is cooking add the pak choi and aminos to the ginger.
    Cook until soft.

    Serve half of everything each.
    Top with Sweet potato discs if you like.
